So kale grows like a weed in my soil… I’ve literally done nothing to it…. except trying to keep up with its growth! Frantically picking every leaf as big as my head every 3-4 days and processing it different ways has made me REALLY enjoy easy and fast recipes that last! Which brings me to this overnight marinade (or half day… as long as you give it time to soften the hard kale leaves). It. Is. Easy. And. Pleasy. Pleasy meaning pretty much everyone I’ve given it to has enjoyed it… even people who’d rather feed their greens to the dogs. They eat this stuff. The strong lemon flavor mixed with a touch of honey for sweetness cuts out the bitterness. The original recipe called for more olive oil but after entering in the macros to My Fitness Pal I decided to cut the EVOO and add some apple cider vinegar to balance out the bitterness and lower the fat. I think this is one of my most popular dishes so far… hope you have the same success! Ingredients can be substituted or quantities altered based upon your tastes. Just try it and have fun knowing this raw, nutritious and easy recipe does wonders to your body without that spoon full of sugar to make THIS medicine go down.
2. Overnight Marinated Honey & Lemon Kale Salad
- Ingredients –
- 6-8 cups kale, washed and torn into pieces (Any type works)
- 1/4 cup nuts/seeds
- 1/8 cup Extra Virgin Olive Oil
- 1/8 cup apple cider vinegar
- 1 tbsp honey/agave
- one lemon with juice and zest
- salt and pepper to taste
- Mix all ingredients except fruit and nuts in a large mixing bowl
- Massage dressing into kale by hand to coat evenly. Refrigerate min 6 hours or overnight
- Before serving, add fruit and nut toppings
Easy. Pleasy. Ingredients you can find in your cupboard. Try it and let me know what toppings you experiment with! Pumpkin seeds are scrumptious but sometimes roasted pine nuts hit the spot. Or the leftover walnuts in the freezer from that one recipe… (btw keeping nuts in the freezer extends their lifetime!).
